Tips of baking...

  1. Be sure to use dry gauges when weighing dry ingredients.
  2. Weigh flour, cocoa powder and other powder ingredients, it is best to use a spoon into the measuring cup. Brown sugar is the only ingredient that you need to pour directly into the measuring cup.
  3. Cake needs to be placed in the baking tray for 10 minutes and then transferred to the cooling rack, ring and tube cake takes at least 15 minutes.

Simple recipe

Crispy puffs

  • Ingredients: Crispy for top
    • Unsalted butter.............24g
    • Sugar powder & fine sugar ...8g
    • Low flour (sieve)...........40g
    • Whole egg (room temperature) 3g
  • Ingredients: Puff
    • Water & milk....111g
    • Unsalted butter..56g
    • Low flour (sieve)56g
    • Salt............0.5g
    • Whole egg.......100g
  • Way of do
    1. First to do the crispy part of mixing sugar and butter to soft
    2. Add low flour and mix with scraper
    3. Add egg
    4. Rub into a cylinder, round area about the size 20 cent coins large ➡ package cling film & white newspaper ➡ put in frozen
    5. Puff part (half of water and milk, a total of 111 grams) water ✚ milk ✚ unsalted butter, boil with low heat until the boiling flame then trne off the fire
    6. Immediately add low flour ➡ mix quickly
    7. Then turn on the small fire, using a scraper to stir the dough (the water evaporated) ➡ turn off the fire when the bottom has a layer of membrane
    8. Place about 5-10 minutes cooling ➡ multiple times to adding a small amount of egg liquid(each time the dough should completely absorb the egg before adding)
    9. Put in a squeeze bag ➡ Put a small amount on the grill pan (about 20 cent coins large) Leave space between them for puffs grow
    10. Thin slices the frozen puffs crispy
    11. Cover the top of puffs in the baking pan (gently put it, do not squeeze)
    12. Oven temperature 185 ℃, bake about 30 minutes (the oven can not be opened in entire processto to avoid cold air get into the oven)
